YIELD: 12 SERVINGS
6 racks pork spareribs
to taste salt
to taste pepper
24 oz. hoisin sauce
24 oz. ketchup
6 oz. cider vinegar
1 Tbsp. prepared habanero sauce
2 Tbsps. prepared chipotle pepper sauce
1 tsp. onion powder
1 tsp. garlic powder
1. Remove back membrane from ribs. Season ribs with salt and pepper and grill over moderate heat.
2. Mix hoison sauce, ketchup, vinegar, pepper sauces and onion and garlic powders until well incorporated.
3. Brush sauce onto ribs, let sauce bake on and serve.
