Effervescent ginger beer is a non-alcoholic mixer that’s an essential component of the Dark and Stormy and Moscow Mule—two popular cocktails. Here, the spicy heat of ginger is paired with the sweetness of apple to make a trendsetting mocktail. It’s rounded out by fresh vanilla bean simple syrup, a dash of apple bitters and fresh mint for complexity and balance.

Ingredients

1/8 tsp. vanilla bean simple syrup (recipe below)
2 cups apple cider or juice
3/4 cup ginger beer (non-alcoholic)
Dash of apple bitters
1 large mint leaf, sliced into small pieces 

Steps

  1. Prepare Vanilla Bean Simple Syrup; strain and chill.

  2. In shaker, combine vanilla bean syrup, apple cider, ginger beer and apple bitter; shake and pour over ice. Garnish with fresh mint .

Vanilla Bean Simple Syrup

1 vanilla bean, seeded
2 cups sugar
1 cup water
Pinch of sea salt

In small saucepan, bring all ingredients to a boil. Strain and chill.
