Aloo Mutter with Tomato Curry Sauce

Aloo Mutter is a traditional Punjabi dish featuring potatoes and peas that are simmered in a tomato-based curry sauce.

Ingredients

Tomato Curry Sauce:
Yield: 3 cups

1 tbsp. oil
1 cup onion, 1/4-in. dice
1 tsp. garlic, chopped
1 tsp. ginger root, minced
1 oz. green chiles, diced
1 tsp. garam masala
1/8 tsp. ground cinnamon
1/8 tsp. ground coriander
1/8 tsp. ground cumin
1/8 tsp. ground coriander
1/8 tsp. turmeric
1/8 tsp. cayenne pepper
3 cups fire-roasted tomatoes, dicedAloo Mutter

Aloo Mutter:

1 tbsp. oil
2 tsp. black mustard seeds
1/2 gal. potatoes, cut into 1-in. cubes, blanched
1/2 qt. green peas
3 cups Tomato Curry Sauce (recipe above)
1/4 cup fresh cilantro, chopped

Steps

Tomato Curry Sauce:

1. In thick-bottomed pot, heat oil. Add onions and sauté until golden brown.

2. Add garlic, ginger, chiles and spices and cook for 1 min.

3. Add fire-roasted tomatoes. Bring to boil and simmer for about 20 to 40 mins. Stir occasionally.

4. Purée sauce in blender until smooth. Taste and correct seasonings if required.

Aloo Mutter:

1. In thick-bottomed pot, heat oil and add mustard seeds. Quickly cook mustard seeds until they start to pop, about 5 seconds. Do not allow to burn.

2. Add potatoes and cook for 1 min.

3. Add peas and Tomato Curry Sauce. Bring to boil and cook for 3 to 5 mins.

4. Taste and correct seasonings if required. Stir in cilantro. Serve immediately.
