Aloo matar is a classic Punjabi dish, which features potatoes and green peas sauteed with Indian spices. This version also includes chopped tomatoes, green chili peppers, garam masala and diced onions.

Ingredients

1⁄4 cup vegetable oil
2 tsp. chopped garlic
2 tsp. chopped ginger
1 cup diced onions
1 qt. raw red potato, cubed
1 cup peas
1 cup chopped tomatoes
1 cup water
1 tbsp. chopped green chili peppers
11⁄2 tsp. garam masala
11⁄2 tsp. paprika
1 tsp. sugar
2 tbsp. cilantro, chopped plus sprigs for garnish

Steps

1. Heat oil in pan. Add garlic, ginger and onions; cook until onions are tender. Add potatoes and peas and cook for 5 minutes, stirring occasionally.

2. Add tomatoes, water, chili peppers, spices and sugar. Cover and cook on low heat until potatoes are soft, about 15 minutes, stirring occasionally.

3. Stir in cilantro and simmer about 2 more minutes. Serve with white rice garnished with cilantro sprigs.
