A fragrant and steaming mix of miso broth, noodles, a variety of vegetables and either chicken or shrimp makes a complete meal in a bowl. Chili sauce on the side for those who like it hot.

Ingredients

1 cup prepared miso broth
1 cup soba (buckwheat) noodles, cooked and drained
1 cup assorted vegetables, such as bok choy, mushrooms, and snow peas, cut into bite-size pieces and stir-fried
1/2 cup cooked shrimp or cubed, cooked chicken
Sliced scallions and/or toasted shallots, chopped cilantro, and chili sauce, for garnish
 

Steps

To order, heat miso to gentle simmer and add soba noodles; stir until heated through. Add stir-fried vegetables and shrimp or chicken; heat through and serve immediately, with scallions, cilantro, and chili sauce.
