Refreshing and tangy describe this wild blackberry treat. Cool and creamy and with a hint of lemon liquer it pleases the palate.

Ingredients

1 1/2 cups heavy cream
1/4 cup sugar
2 vanilla beans, split
1 tbsp. gelatin
3/4 cup yogurt
3/4 cup sour cream
1/4 cup orange liqueur
3 pt. wild blackberries
1/2-1 cup sugar
1 tbsp. lemon liqueur

Steps

  1. Heat cream, sugar, vanilla seeds, and gelatin in a med. saucepan over med. heat until scalding, whisking continuously.

  2. Remove from heat and let cool for a few min. Whisk in yogurt, sour cream, and orange liqueur. Chill in a mold or individual ramekins.

  3. Puree 1 pt. of blackberries with sugar to taste and the lemon liqueur. Press berry sauce through a fine-mesh sieve to remove seeds. Reserve remaining whole berries for serving.

  4. Unmold crema onto plate. Surround with whole blackberries and sauce.
