Vegan Peanut Butter Apple Crisp

Another great taste of fall that needs no introduction: Apple crisp from Hershey Foodservice is a classic, and it’s vegan, too.

YIELD: 24 servings

Nonstick spray, as needed
16 cups apples, peeled, thinly sliced
3 cups brown sugar, divided
1 Tbsp. ground cinnamon
2 tsps. lemon rind, grated
½ cup lemon juice
½ cup water
2 cups old fashioned rolled oats
2 cups prepared peanut butter sauce
non-dairy whipped topping, as needed (optional)

1.    Heat convection oven to 300°F or conventional oven to 350°F. Lightly spray one full steam-table pan with nonstick spray.
2.    Stir together apples, 1 cup brown sugar, 1 cup flour, cinnamon and lemon rind in large mixing bowl. Spread in prepared pan. Add lemon juice and water; set aside.
3.    Combine oats, remaining 2 cups brown sugar and remaining 2 cups flour in large mixing bowl. Add peanut butter sauce; blend until crumbs form. Sprinkle mixture over apples.
4.    Bake 1 to 1 ½ hours or until apples are tender and edges are bubbly. Cool slightly and serve with non-dairy whipped topping, if desired.
