Vegan Chocolate Chip Walnut Cookies

These chocolate chip cookies use egg replacer, walnuts, margarine and chocolate chips to create a delicious option for vegans who are craving a classic cookie.

Ingredients

2 tbsp. EnerG Egg Replacer
3 oz. water
1 lb. Smart Balance margarine
11/2 cup brown sugar
11/2 cup granulated sugar
2 tbsp. vanilla extract
5 cups all-purpose flour
2 tsp. salt
2 tsp. baking soda
2 cups walnuts, chopped
3 cups chocolate chips

Steps

1. Preheat over to 350°F. Combine water and egg replacer, stirring out lumps. Set aside.

2. Place margarine, sugars and vanilla in mixing bowl with paddle attachment, or use a hand mixer with beaters. Mix or cream until creamy and fluffy.

3. Add flour, salt, baking soda and egg replacer and mix until incorporated. Add walnuts and chocolate chips and mix until incorporated, but don’t overmix.

4. Scoop with spoon and place on parchment paper-lined baking sheet. Bake for 12-15 mins. Cookies may be soft when they come out. If they look underbaked you can bake until desired consistency is achieved.
