This taste of the islands dessert features kumquats, pineapple, nuts and cinnamon.
3 eggs
2 cups sugar
1 cup oil
1 tsp. cinnamon
3 cups flour
2 tsp. baking soda
1 tsp. salt
11/2 cups kumquat, chopped
1 cup nuts, chopped
1 20-oz. can crushed pineapple, well drained
1. In bowl, beat eggs, sugar and oil. Fold in dry ingredients and mix well.
2. Add chopped kumquats, nuts and pineapple. Pour into greased and floured tube pan.
3. Bake in 350°F oven for 1 hour and 15 mins. Cool, remove from pan.
