Have an abundance of peaches? These simple dumplings are a great way to use excess fruit and they contain almost no sugar.

Ingredients

Fruit:

2 cups Very Ripe Peaches, diced
2 cups fresh or frozen blueberries
½ tsp Nutmeg
½ tsp Cinnamon
¾ cup Maple Syrup
1 Tbsp Lemon Juice
½ cup water


Dumplings:

2 cups flour
4 tsp baking powder
½ tsp salt
1 Tbsp Sugar
2 Tbsp Butter
1 cup Milk
 

Steps

  1. To make fruit: Add all ingredients to skillet and heat over medium high heat until softened.

  2. To make dumplings: Mix all ingredients together into a soft dough.

  3. Drop spoonfuls of dough on top of hot fruit in skillet.

  4. Cover skillet tightly with lid and simmer 15 minutes.

  5. Serve with scoop of vanilla ice cream.
