A quesadilla is a snack that works in every segment—school foodservice, college and university, quick service and casual dining. This three-ingredient version is easy to put together, and the mango adds juicy contrast and nutritive value.

Ingredients

8 oz. ripe fresh mango, thinly sliced (36 slices)
4 oz. double cream brie, thinly sliced (12 slices)
2 (10-in.) flour tortillas
Guacamole and pico de gallo

Steps

  1. Arrange cheese and mango slices on one tortilla; top with second tortilla. Place on baking sheet.

  2. Bake at 350° for 5 to 7 minutes until cheese melts. Or place in a panini press or skillet and cook until cheese melts. Cut into wedges. Serve with guacamole and pico de gallo.
