Goat cheese gives this cheesecake some extra zing, setting it apart from the rest.

Ingredients

2 oz. butter
12 oz. granulated sugar
Zest of 1 lemon
1/4 tsp. vanilla extract
11 oz. goat cheese
29 oz. room tempered cream cheese
10 oz. eggs
6 oz. sour cream
8 oz. finely chopped toasted walnuts

Steps

  1. Cream butter and sugar. Add lemon zest and vanilla.

  2. Add goat cheese and cream cheese in chunks until incorporated.

  3. Add 1 egg at a time until incorporated.

  4. Add sour cream.

  5. Sprinkle finely chopped walnuts into silicone bake mold.

  6. Scoop in batter.

  7. Bake in water bath for 45 to 60 minutes at 250°F.

  8. Remove from oven, pour water in sink.

  9. Put in freezer until cheese cake is firm enough to pop out of mold undamaged.

  10. Reserve cheesecakes in cooler until plating.
