Ingredients

Almond sponge
380g almond flour
380g sugar
380g eggs
200g butter
50g PreGel 5-Star Chef Pastry Select™ Vanilla Compound
50g all-purpose flour

Vanilla diplomat cream
350g PreGel 5-Star Chef Pastry Select™ Pastry Cream Superior (Cold Process)
800g milk
200g cream
50g PreGel 5-Star Chef Pastry Select™ Vanilla Compound
280g whipped cream

Steps

Almond sponge

  1. In the mixer, whisk together the almond flour and the sugar.

  2. Combine the eggs and the PreGel 5-Star Chef Pastry Select™ Vanilla Compound. Add to the mixing bowl and whip on high speed for 3 minutes.

  3. On low speed, add the sifted flour and then the butter.

  4. Bake in a frame at 160°C/320°F for about 20 minutes or until golden.

  5. Cool completely and cut into small cubes.

Vanilla diplomat cream

  1. Whisk all ingredients together except the whipped cream until all powder is dissolved and mixture is uniform.

  2. Allow to set in refrigerator, at least one hour.

  3. Hand whisk pastry cream to result in a smooth texture. Gently fold in the whipped cream.

  4. Set aside for assembly.

Additional Tips

You may replace 5-Star Chef Pastry Select™ Vanilla Compound with PreGel Vanilla Purissima Bean Traditional Paste (Vanilla Bean) or PreGel Vanilla Velvet Traditional Paste (American Vanilla).
