The simplicity of this New York-style cheesecake makes it a hit.

Ingredients

2.5 oz. softened butter
4 lb. 10 oz. cream cheese
1 lb. 2.5 oz. sugar
2.5 oz. bread flour
1/2 tsp. salt
1 lb. 3 oz. sour cream
1/2 tsp. vanilla
12.5 oz. eggs
8.5 oz. milk
2 graham cracker crusts

Graham Cracker Crust

1 lb. 8 oz. graham cracker crumbs
5.75 oz. softened butter
1.33 oz. sugar

Steps

1. Cream together butter, cheese, sugar, flour, and salt
2. Add sour cream and vanilla
3. Add eggs, scrape all the way down. Mix until incorporated.
4. Add milk, incorporate.  Mix 2-3 minutes until smooth.
5. Pour half of batter into each 10” prepared graham cracker crust
6. Bake in a water bath
7. Bake at 350°F in conventional oven for approximately 1 hour 20 minutes
8. Let stand at room temperature for 30 minutes
9. Cool in refrigerator or freeze

Graham Cracker Crust

1. Combine all ingredients
2. Spread half into each 10” round springform pan
