Cheesecake is one of the University of Colorado, Boulder's signature items at its Center for Community dining hall and retail bakeshop. This cheesecake uses classic flavors such as a graham cracker crust and cream cheese to satisfy customers.

Ingredients

Graham Cracker Crumb Base
Yield: 2 full sheet pans at 3½ pound each

4 lb. graham cracker crumbs
1 lb. sugar
2 lb. butter, melted

Cheesecake Batter

3 lb. sugar
12 lb. cream cheese
6 oz. flour
3 lb. eggs
3 lb. sour cream
2 oz. vanilla 

Steps

1. For Graham Cracker Crumb Base: Mix crumbs and sugar. Add butter and mix until moist. After pressing crust mixture onto sheet pan, with pan extender, par bake for 14 minutes at 350°F.

2. For Cheesecake Batter: Cream sugar, cream cheese and flour until light and fluffy. Add eggs slowly. Scrape bowl.

3. Fold in sour cream and vanilla. Pour on to prepared crust and bake at 225°F for and a half hours.
