Fresh blueberry juice adds seasonal flavor to this traditional custard dessert. 

Ingredients

3 1/4 cups + 2 tbsp. fresh blueberry juice, divided
2 cups sugar
1 1/2 tbsp. gelatin
1/2 cup fresh lemon juice
3 cups buttermilk

Steps

  1. In sauce pan, combine 2 1/2 cups blueberry juice with sugar and heat until sugar is completely dissolved.

  2. In small bowl, stir together 1/4 cup plus 2 tablespoons blueberry juice with gelatin. Add gelatin mixture to hot sugar mixture.

  3. Stir in 1/2 cup of blueberry juice, lemon juice and buttermilk to sugar mixture.

  4. When well combined, divide into round 4-ounce aluminum baking cups and refrigerate overnight or minimum eight hours.

  5. Invert cup onto plate for service.
