Marshmellows aren’t just for campfires. The University of Maryland food truck features this savory dessert made from scratch.

Ingredients

782.5 grams granulated sugar
625 grams tap water
1175.5 grams glucose
75 grams agar agar powder
600 grams egg whites
1/4 cup basil, minced
Powdered sugar as needed
Corn starch as needed

Steps

  1. Combine sugar, water, glucose and cook to 127°C.

  2. When sugar is almost to temperature, start to whip egg whites in electric mixer.

  3. Slowly add sugar to whipping egg whites.

  4. Add agar agar. Whip on medium for 10 minutes, until stiff peak.

  5. Add basil, whip until incorporated.

  6. Pour immediately into lined and sprayed sheet pan.

  7. Sift 50% powdered sugar and 50% cornstarch on top and bottom of marshmallow.

  8. Wrap and freeze. Cut from frozen.
