Bananas Foster Parfait

YIELD: 7 servings

4 Tbsps. unsalted butter
1 cup brown sugar, packed
½ tsp. cinnamon
4 ½ cups bananas, sliced
2 Tbsps. rum
2 lbs., 10 oz. Greek nonfat plain yogurt
1 cup granola
1/3 cup semi-sweet mini chocolate chips

1.    Heat butter, brown sugar and cinnamon in large sauté pan over medium heat, stirring until sugar dissolves.
2.    Stir in bananas. Cook until bananas are softened, about 2 minutes; add rum and stir to combine.
3.    Remove from heat and refrigerate until cool.
4.    To assemble: Spoon 2.5 oz. banana mixture into bottom of 12-oz. parfait cup; top with 2.5 oz. yogurt, ½ oz. granola, 3 oz. yogurt and 2.5 oz. banana mixture. Garnish with 2 tsps. each of chocolate and granola. Serve immediately or hold under refrigeration until ready to serve.
