Chocolate pudding gets a new twist with fresh avocados and maple syrup.
5 ripe avocados, halved
11⁄2 cups cocoa powder, 22%-24% Dutch
4 tbsp. maple syrup
1. Combine avocados and cocoa powder in blender; purée on high speed until well blended.
2. Add maple syrup in slow, steady stream and continue to blend until mixture reaches puddinglike consistency.
3. To serve, scoop 4 ounces pudding into soufflé cup and garnish appropriately.
