Out with the bagels, in with the acai bowls. Following a case study last year about what students, faculty and visitors are looking for on the University of Southern California’s (USC) Health Sciences campus, the new branded concept Qwench has replaced a space formerly occupied by a national bagel concept.

“The general consensus is that [customers] want a healthier trend overall, not just a few healthier options,” says David Corral, assistant director of retail at USC. Qwench fits the bill, with a menu of nutrient-dense juices, juice blends, super food-rich yogurt bowls and a few familiar grab-and-go lunch staples as well. Here’s a quick tour of the new concept.
