University rolls out gluten-free station

Valparaiso University dining has rolled out its new gluten-free station, G8, to meet the needs of its students with dietary restrictions, says The Torch.

The station’s menu will change daily, with a variety of proteins, vegetables, starches and other options, all gluten-free.

“We try to keep the options as easy as we can because we understand that students have specific needs that need to be met,” Dining Service Associate Director Eric Macharia told The Torch. “As the food service provider, we have to adjust and be able to fulfill all of those needs.”
