University of Minnesota Dining Services is working with students groups to bring more sustainable foods to the campus, reports The Minnesota Daily. Last year, the school's dining department says it purchased about 176,000 pounds of local produce, 26,000 pounds of local meat and 1.2 million pounds of local dairy products. A little of that came from a student-run organic farm called Cornercopia, which is looking to increase that total in the coming year.
