University of Mary Washington wins annual culinary competition

The winning team served a menu inspired by the Colonial era.

The University of Mary Washington in Fredericksburg, Va., has won the 2018 Chefs’ Fare culinary competition.

The annual competition hosted at the university has chefs prepare themed meals for students, who then vote on their favorite dishes.

UMW chefs competed against peers from Shenandoah University, Emory & Henry College, Marymount University and Virginia Wesleyan University. This year’s theme was “Home Town Take Down,” and teams were asked to create menus that represented their hometown or region.

The winning UMW culinary team designed a Colonial-era menu that consisted of BBQ pork parfait, zucchini fritter with cheesy grits, and chocolate cheesecake with tart cherries and Girl Scout Cookie crust.
