University invites local restaurants to host dining hall pop-ups

To spice up events on campus, Northwestern Dining is looking to commercial ops.

As part of new tactics to improve on-campus eateries, Northwestern University in Evanston, Ill., is partnering with local restaurants for dining hall pop-ups, The Daily Northwestern reports.

Director of Dining Ken Field says that participating restaurants will be able to “feature some of their food, techniques, talk to students and hopefully encourage students to go out and try their restaurants as well.”

The idea for the monthly pop-ups came after the success of inviting a local fine-dining restaurant to host a tasting as part of the university’s sustainable seafood week. Based on how well that event was received, the school’s dining services is paying more attention to sustainable, local ingredients, Field says.
