University adds vegan station after student push

A pasta bar and a vegan station were added in response to student feedback.

Middle Tennessee State University in Murfreesboro, Tenn., has added a made-to-order vegan station and a pasta bar to one of its dining halls in response to student feedback, MTSU Sidelines reports.

At the vegan station, students can order stir-fry with their choice of tofu, rice and fresh vegetables. Dining staff say that they had wanted to add a vegan station for a while, and so far, students have been receptive of the new offerings.

“Students, faculty and staff that are not vegan have commented on how happy they are with this station as well,” Dining Marketing Manager Krystal Sargent told Sidlines.

The pasta bar—which serves a rotating pasta, protein and sauce—was added to the weekend menu lineup. Dining staff are also planning to roll out theme nights such as Taco Tuesday and Chicken Nugget Night in the future.
