Starting in November, the University of Wisconsin-Madison will begin offering full kosher dining as part of its regular food service plan, reports the Wisconsin State Journal. The new kosher kitchen will be part of the ongoing renovations of the Chadbourne dining hall (which is to be renamed Rheta’s, in honor of former FSD Rheta McCutchin), which will also feature Asian selections, a Mongolian grill and trraditional favorites like pizza, pasta, sandwiches and salads. There are an estimated 5,000 Jewish students on the campus, though not all comply with kosher dining laws. Those that do currently have to arrange to get them specially made, prepare them themselves or compromise by picking from the available food choices in the dining halls. The kosher slections are also expected to satisfy Muslim students who adhere to eating by halal rules. To accommodate Muslims, the kosher kitchen will not use ingredients that contain alcohol. Located within the main kitchen at Chadbourne, the kosher kitchen will have a separate room and its own equipment to ensure that rules such as the strict segregation of meat and dairy are observed.
