Snack/Sushi Bar a hit at Kenyon

Ethnic choices and freshness are in with today's college students, and Kenyon College-dining Services, along with its management services provider AVI Food Systems, is proving that with its new athletic center cafe, which has the advantage of sitting in the entrance lobby of the campus's new $80 million, 263,000-sq.ft. facility.
The cafe's menu centerpiece is "Sushi With Gusto," a freshly-made sushi station with a sushi expert onsite rolling fresh selections, often to order, says Andrew Limperos, district manager for AVI. The cafe also offers fresh smoothies at its X-Traction station, grab-and-go salads and wraps and a variety of bottled beverages ranging from traditional sodas to new age selections from Coca-Cola, the campus beverage contract holder.
The cafe is open from 10 to 10 and generally manned by two staffers. It averages 125 customers a day with a $4.25 check average.
