Notre Dame Participates in Meatless Monday Initiative

The University of Notre Dame began participating in the national Meatless Monday campaign in mid-October.

The University of Notre Dame is in its second week of participating in the national Meatless Monday campaign, reports the Observer campus paper. While meat-based dishes are also offered on the designated days, the dining halls are also serving meatless versions of familiar dishes such as fajitas and burgers, as well as more unique ethnic options. The first week's menu featured vegetarian sliders while the second week selection includes portabella fajitas, goat cheese and asparagus pasta, quinoa rice corn cakes, savory vegetable pancakes and an Indian stew.
