April 18—Dining halls all over the country have been forced to alter their offerings, educate staff and have gluten-prohibited areas so affected students don’t get sick. Those are just baseline expectations, though. There are some North Jersey foodservices out there that are redefining safe eating standards.
Madison-based Gourmet Dining Services, which serves 10 schools in the region, including Bergen Community College, Fairleigh Dickinson, and New Jersey Institute of Technology, is one of these services.
For starters, they offer vacuum-sealed meals.
