N.Y. college’s new director of dining aims to bring big changes

Union College’s new director of dining services, Jeff Kurto, is hoping to add some spice to the campus’ foodservice, according to the school’s student newspaper, Concordiensis.

Kurto—who assumed his post in December—will initially focus on serving more personalized, health-oriented and flavorful items, including made-to-order food, low-fat and high-protein offerings and more fruits and vegetables.

He’ll also launch “Union Dining, Beyond the Plate,” a new program that aligns with his focus on food quality and freshness.

“This is where we plan to tie in the core value of wellness, sustainability, community, development and culture into what we do in dining services,” Kurto told the newspaper. “Our goal is to balance everything we do into how it enhances these core values and adds to the Union experience.”
