Luby's Culinary Services recently opened a Fuddruckers burger unit at Lone Star College in Texas. The venue replaced another concept in the location and has increased sales by 18 percent and check average by 12 percent, says Todd Coutee, senior vice president of operations.

“Kids recognize brands,” he says, adding that the company, a division of the Luby's cafeteria chain, plans to open five more Fuddruckers units in onsite locations in the next six months. “We believe it is a great fit in any type of environment: hospitals, corporate campuses as well as colleges.”

The Lone Star location features a shortened menu from the standard commercial outlets — third-of-a-pound burgers, chicken sandwiches, chili cheese fries, hot dogs — as well as lower prices. It is open for lunch and dinner and sees an average of about 80 customers a day.
