Kansas University Dining Services expects to get about twice as much fresh produce this year as before from its rooftop garden thanks to a major expansion of the available space, reports the Lawrence-Journal World. The garden, on the roof of the Kansas Union, has been in place for about four years, supplies herbs and tomatoes for the Union's Impromptu Cafe and various catered events, as well as herbs for salad bars in the Union and another location. The new space, made available by the University Women's Club, will allow the garden to produce around a hundred pounds of herbs and tomatoes this year.
