CSU to Use Food Trucks to Bridge Renovation Dining Gap

Colorado State University plans to use food trucks to help bridge the gap in its campus dining services caused by the closure for renovation of a major dining center.

Colorado State University plans to use food trucks to help bridge the gap in its campus dining services caused by the closure for renovation of a major dining center, reports the Rocky Mountain News. The food court in the Lory Student Center will close for a year while it undergoes major reconstruction.

In the meantime, the trucks—all established businesses in the local Ft. Collins market—will be welcomed to the CSU campus and take up set spots in a parking lot. Five have been engaged so far offering a variety of cuisine choices, from hot dogs and burgers to Asian and Italian dishes.

A couple of the food court stations will continue to operate in other locations in downsized forms while the construction goes on.
