College serves dogfish in dining halls
Chefs say menuing the lesser-used fish is a cost-effective way to support local fisheries.

The University of Massachusetts at Amherst has found a local, sustainable fish for its Friday fish fry, Daily Collegian reports.
Called dogfish, the fish is a type of shark found in local waters. Due to the fish’s abundance and underutilization on the market, chefs at the university say that using it is a cost-effective way to support local fisheries.
Last fall, the university began hosting a fish fry every Friday, during which 100 to 150 pounds of dogfish are served at each of the four dining halls on the Amherst campus. The fish is also available on the menu throughout the week in the form of fish wraps, bouillabaisse and fish stews.
Drawing on dogfish’s success, the university is looking at other local fish replacements such as mackerel to be offered on menus in the future.
