This month, Penn State University replaced dairy with locally sourced items from the campus' legacy campus creamery, Penn State Berkey Creamery. The creamery, on campus since 1865, will hopefully keep the the profits in the campus community. Marketing designed special signage to educate the students on their new options on campus. Satisfying meals that come in at under 800 calories are the signature at North Dakota State University in Fargo and is another trending story for college and university dining from this past month. The student-led healthy-eating oasis on campus has a menu designed by dietetic interns earning course credit while crafting meal options with 800 calories or less in real-world setting. Also, Jon Bon Jovi Soul Kitchen at Rutgers University-Newark opened earlier this year and gives students the option of paying forward for their three-course meal or volunteering. Soul Kitchen’s approach is especially resonant for Rutgers-Newark because half the student body comes from low-income families.
