College boosts sales with vegan station

The station, which serves vegan comfort and street foods, grew sales 400%.

Canisius College in Buffalo, N.Y., has introduced a vegan station specializing in comfort and street foods, The Buffalo News reports.

The station, named Pitchforks, was created by three campus dining chefs with help from the school’s Veg Club. To create the rotating menu, the chefs and students visited local vegan and vegetarian restaurants and got inspiration from cookbooks.

Chartwells, the school’s vendor, says that Pitchforks has seen a 400% increase in year-over-year sales in comparison to the vegetarian station it replaced.
