A look inside Rutgers’ new chef-driven, health-focused café

Rutgers’ New Jersey Institute for Food, Nutrition and Health is on a mission to prevent childhood obesity and obesity-related disorders such as diabetes, heart disease and cancer through better nutrition. So this October, the institute opened Harvest, an on-site café that showcases the program’s main principle to “eat well, live well.” The menu, developed by Rutgers chefs Rachel Reuben and Ian Keith, is big on whole, seasonal food made from scratch and avoids all the additives, chemicals, sugars and artificial enhancers found in most processed foods. With make-your-own ramen bars, Mongolian grills and an ever-rotating selection of ingredients, Harvest encourages its customers to have fun experimenting with flavor while eating healthy.
