“Soft serve is a big hit, even in winter,” says Allan Sheldon, chef de cuisine of East Quad at the University of Michigan in Ann Arbor. “And when one of the machines is broken…students are very…vocal.” Starting on orientation day, incoming freshmen get up to speed on soft-serve 101…all dining halls are equipped with soft-serve machines (a total of eight machines across campus) and suitable backdrops to photograph cool creations before they melt.
