There are differing accounts as to the origin of Eggs Benedict. In this version, we've substituted Maine Lobster for the Canadian bacon and embellished the English muffins with a bit of baby spinach.

Ingredients

1 large English muffin, split
Butter
1 cup fresh baby spinach leaves
Extra-virgin olive oil
Salt and freshly ground pepper, to taste
2 tomato slices, cut 1⁄2-in. thick and grilled
11⁄2 lb. Maine lobster, cooked and shelled
2 large eggs, poached
1 cup warm hollandaise sauce
Fresh chives (optional)

Steps

1. Griddle and butter muffin halves until golden brown. Wilt spinach in olive oil; season with salt and pepper. Warm lobster meat in melted butter.

2. To assemble, divide spinach on muffin halves; top with grilled tomatoes and
lobster. Arrange poached eggs over lobster and spoon on hollandaise. Garnish with spears of fresh chives.
