Golden brown and delightfully tender, these biscuits are studded with corn kernels and a spicy kick.

Ingredients

4 cups all-purpose flour
2 tbsp. baking powder
2 tsp. salt
2⁄3 cup vegetable shortening
2 cups whole milk
5 jalapeños, minced
1 cup fresh corn kernels
 

Steps

1. In a large mixing bowl, combine flour, baking powder, and salt and stir until just mixed. Add shortening and rub with your fingers until mixture is barely combined.

2. Gradually add milk; stir until combined, without overworking mixture. Add jalapeños and corn; turn dough onto lightly floured surface.

3. Knead dough gently and pat into a circle, about 1⁄2-in. thick (depending on desired thickness).

4. Cut out biscuits, transfer to baking sheet and brush with melted butter. Bake 12-15 min. until golden.
