A filling dish made up of breakfast favorites. Eggs, bacon and mashed potatoes all scramled together and deliciously seasoned.

Ingredients

12 strips turkey bacon
3 bunch scallions, chopped
24 eggs
4 1⁄2 cups skim milk
1⁄2 tsp. garlic powder
3 cups instant mashed Idaho Potato flakes
 

Steps

  1. In a large, heavy skillet, cook bacon until crisp; remove and drain. Pour off fat, leaving approx. 3 tbsp.

  2. Return skillet to heat and add onions. Cook until soft, add eggs and stir to scramble, approx. 4-5 min.

  3. Add milk and cook, stirring, until very hot. Add instant mashed potatoes and stir until desired consistency.

  4. Season to taste, and serve topped with crumbled bacon.
