Apple Sausage Corn Pancakes

Yield: 60, 20 oz. pancakes

5 cups water
5 lbs.corn muffin mix
4 large eggs
2 cups red onion,diced
2 Tbsps.sage
6 cups apples,canned or frozen, diced
2 cups breakfast sausage,browned, diced or crumbled
as needed fruit sauce (optional)**

  1. Pour water into mixing bowl.

  2. Add mix and eggs.

  3. Mix with rubber spatula for 30 seconds. Scrape bowl and continue to mix for another 30 seconds.

  4. Fold onion, sage, apples and sausage into batter.

  5. Bake 350°F for 14-18 minutes if using a convection* oven or 375°F for 16-20 minutes if using a standard oven. *If convection, rotate pans baked one-half turn (180°) halfway through baking.

  6. Serve with fruit sauce.**
