“Customers love this product because of the flavor of the homemade granola,” according to the dining services team at Johnson County Community College. “One customer tried several brands [available] in her [grocery] store and finally asked us if our team at the college made it ‘because she couldn’t find anything that tasted as good.’ It’s a very good selling item throughout all the retail operations including our coffee bars and Café Tempo,” the team says. “Very popular among staff and students alike.”
Ingredients
12 lb. dry oatmeal (not instant)
6 lb. sliced almonds
6 lb. pecan pieces
6 lb. brown sugar
4 lb. shredded coconut
1/2 cup ground cinnamon
4 tbsp. salt
10 lb. melted butter
5 lb. honey
3/4 cup vanilla
5 lb. + 8 oz. Raisin Bran cereal
Yogurt Parfait with Homemade Granola
3 #24 scoop Homemade Granola, divided
2 #16 scoop vanilla yogurt, divided
12 slices of strawberry (two strawberries), divided
16 to 20 blueberries, divided
Steps
Mix first seven ingredients in mixer.
Add honey and vanilla to melted butter, mixing well.
Add Raisin Bran to dry ingredients and incorporate. Do not over mix.
Add butter mixture slowly to dry ingredients. Spread in thin layers onto 10 full sheet pans.
Bake at 325°F for 12 minutes. Turn and stir with a metal spatula. Return to oven and bake 7 more minutes. Remove, turn and stir again.
Let cool and store at room temperature in airtight container. Shelf life up to 6 weeks.
Yogurt Parfait with Homemade Granola
Alternate layers of one-third of granola, one-half of yogurt, one-half of strawberries and one-half of blueberries in a 12-ounce clear cup until ingredients are used.
Secure clear lid on top of parfait and place in refrigerator for sale.
