Cinnamon Quinoa Salad

Not all quinoa has to be savory. This filled with apples and spices, this quinoa salad would make for a nutritious morning meal.

Ingredients

2 cups diced apples
Cinnamon
Sugar
Nutmeg
2 1/2 cups peeled, diced sweet potato
1 gal. cooked quinoa
Vegetable stock

Dressing

1/8 cup sugar
1/2 cup apple cider
1 1/2 cups olive oil
Salt
Pepper
 

Steps

  1. Core apples, dice and toss with cinnamon, sugar, and nutmeg.

  2. Bake at 350°F until tender, cool immediately.

  3. Peel and dice sweet potatoes. Roast at 350°F with same spices as apples, until tender.

  4. Boil quinoa in vegetable stock for approximately 8-10 minutes, drain and cool.

  5. Make dressing by combining sugar, apple cider, salt and pepper to taste. Slowly whisk in oil.

  6. In mixing bowl, combine potatoes, apples and quinoa. Add dressing slowly (too much will make it soggy).
