The University of Oklahoma in Norman, Okla., debuted an Eataly-inspired food hall that features three microconcepts, including a vegan butcher station.
2. Springfield Public Schools Culinary and Nutrition Center
When the nutrition team at Springfield Public Schools in Springfield, Mass., wanted to provide higher-quality, scratch-made meals for students, they constructed a 67,000-square-foot culinary and nutrition center to supply freshly made meals to the district’s 65 schools.

3. LSU Performance Nutrition Center
Louisiana State University in Baton Rouge, La., opened a dining hall for student athletes, giving athletes a place to not only eat but also learn how to cook for themselves.
Owens Food Court at Virginia Tech in Blacksburg, Va., was renovated over the summer to include new global cuisines such as Indian, Italian and Mexican.
